Twice a year I get a box of food from Ometz (a Jewish Agency) to help with Passover and Rosh Hashanah. Passover's frozen little chicken needed to be dealt with before I get this year's RH box. It's a little thing and has to be cooked for hours before it's edible.
I took it out yesterday after I got the food bank delivery. It included one red pepper on it's way out and a yellow which was a little closer. they needed to get used.
This afternoon, I chopped up some onions, a full garlic bud and the two peppers. Put the slow cooker pot onto the large burner and after an addition of some olive oil, I tossed in the onions and garlic and then the peppers. I also added some rosemary from the porch. After that got going I popped the chicken pieces (less skin... easier than trying to clean it), added about a cup of water, lots of fresh ground pepper and a touch of sea salt.
After about an hour, still not sure which direction it was going to take, I decided I was in the mood for something with cumin... added a jar of tomatoes (less the liquid), herbamare, chipotle seasoning, cumin, some adobo seasoning. Let it go for about 30 minutes and then took some of the hot liquid and added it to some corn flour. Mixed and added it to the pot.
I'm ticked off cause I thought I had a can of black beans but no such luck. Only the dried variety. So, I may add a can of refried black beans or just have them with it. I'm going to remove the bones and cut up the chicken.
Okay. Time to go eat. I just made myself hungry. *grin*
