Me I mean. Remember how I'm not supposed to be doing dishes??? And someone comes in once a week for that? Yeah. So, that's not really working out so well, ya know.
Yesterday I decided to go shopping. End of the month so my disability was in and Adi was willing to help me out with the shopping as was Zander. :-)
I decided that since it's been a hell of a long time since I actually cooked something for my eldest, and he's coing in on Thursday night (late), I decided to make vegan stuffed peppers. I bought an eggplant and some zuchini and mushrooms and three good sized (and light-so fewer seeds) green peppers and one nice looking poblano (sp?) pepper. Also some Classico sauces...one was a roasted portabello :-)
Today, once I was up and moving, I did the dishes and made my breakfast... merguez saucage and eggs in a tortilla. :-) Really good.
Anyhow...remember those dishes??? I did them. Then, over the course of the afternoon, I ... peeled and sliced the eggplant and zuchini, sliced and chopped up a good sized white onion, sliced up about 8 large white mushrooms, chopped up about half a bud of garlic and started them all going in a large glass pot I have.
Did the dishes.
Put a cup of red rice on to cook and a cup of quinoa as well. Not together. This being vegan, no eggs were mutilated or abused in the preparation of this dish. :-)
Went out to the porch and cut myself some rosemary, basil, parsley, oregano and thyme. :-) Chopped it up and added it to the mixture. Then some pepper, chili, herbamare. mixed Italian herbs entered the picture.
During this whole thing, I'm doing dishes and lying down.
I cut up some more onions, mushrooms and garlic and threw it into a pot with some olive oil. Added the jar of classico sauce and a jar of whole fresh tomatoes (thanks Serena) ground up in their jar with my immersion blender. I let that simmer for a while while I had dinner (sitting at the table like a real person..in mine own home, yet *grin*).
I added about half of the rice and half of the quinoa to the *mixture*
I then cleaned out the peppers...I left the pavlano whole but halved the regular ones. I used rubber gloves handling the pavlano. It is hot.
Stuffed them all with the *mixture* and laid them in the baking dish. Poured the sauce over everything, covered it with tinfoil and put it on a baking pan and into the oven at 300 for two hours. Yes, I did put it in on my own. I also took it out to check and put it back in again and then removed it and put it on a rack in front of the window. My whole apt. smells delicious. :-)
Then I did more dishes. I am not impressed with myself. I did what I needed to. But I am calling Erik again tomorrow.
Northbard.... you get the poblano. It's too hot for me. :-)
I am quite pleased that I got it done. I am pissed off that I had to do the dishes. I am not thrilled with the pain in my hip and back. Definitely calling Erik tomorrow.
