The rat of touille is done and cooling in the fridge before hitting the freezer tomorrow.  I now have 8 vegetarian sides. :-)  I had two helpings tonight...one with supper and another about 2 hours later as a snack.  Very very tasty.  It was declared delicious by Northbard. :-)

It only took me four hours to do all the prep. *grin*  It contains... eggplant, zucchini, mushrooms, one each of green red and orange peppers, garlic, onions and the three really really soft tomatoes from the food bank and a jar of home canned tomatoes.  Some dried Italian seasoning, my herb mix., a dash of chili powder and a generous helping of ground 5pepper mix.  Absolutely no salt.  Northbard noticed the lack.  i didn't.  But I don't use much salt, so... :-)

I made it all in my slow cooker... turned it up to high and added olive oil.  I put in the onions and garlic first and once they were soft enough, threw in the peppers.  I let them cook a bit and then I added everything else and let it go. :-)

I am most pleased.
